While there are a few good ones, like the Fullmetal Alchemist manga profile book, the MST3K episode guide and, well, all of the Red Green books, those tend to be written by the creators. I will admit that I own the FMA novels, but I knew going in that those would be kinda flakey and a game of "spot the Mary Sue!"
The one case of decent paid-for-fan fiction I can think of at the moment is the Sonic comics, where the newest head writer for the book used to be a popular fan fiction author. I have no issue supporting him at the moment, but I enjoyed his work in the fandom before.
